If you are like me - a relative beginner when it comes to cake decorating, then I urge you to have your first go at making fondant icing with this recipe. Using just 3 really basic ingredients, its simple and tasty. This was my very first attempt at anything like fondant, and as you can see I have some practice to do with my edges!! ;)
Ingredients:
500g of marshmallows
2 tablespoons water
1 kg icing sugar
Method:
Using a large microwave-safe bowl add marshmallows and water. Microwave on High for 1-2 minute or until the marshmallows are puffed up in size and starting to melt. Gently stir until consistency is smooth.
Option: Add food colouring to the mixture to make it your preferred colour or use already coloured marshmallows.
Gradually add the icing sugar (keeping 1 cup aside for kneading and rolling) while continuing to stir until you have a dough like consistency.
Place dough onto a surface dusted with reserved icing sugar and knead the dough until smooth, silky and no longer sticky. Roll into a ball, wrap in glad wrap and refrigerate overnight.
Remove from fridge and allow dough to come to room temperature. Place reserved icing sugar on the bench and begin to roll out the dough.
